Charming and Inexpensive Dinner: Ja Cie Kocham and Cleanliness is Next to Godliness Celebrate The Mommy’s Birthday!

Yes, that is a homemade birthday cake.  And yes, I baked it.  And yes, it actually turned out!   At some point I will learn how to put icing on a cake, but right now I’m just excited that the cake itself wasn’t underdone.  Let’s just say that I was going for a rustic look.

Emmy, of Cleanliness is Next to Godliness, and I decided to throw The Mommy a fantastic birthday dinner that surrounded her with good food, family, and lots of laughter.  Being The Mommy means that she cannot stand by and let us have all of the fun in the kitchen.  She wanted to help cook, too!

My sister was a good sport because she and I were supposed to cook everything together, but unfortunate circumstances (mainly traffic and last minute food purchases) led me to arrive a mere 30 minutes before dinner.  I manged to bake the cake and make the salad, but the majority of the work was done by my sister.  Thanks, Emmy!  Although, I don’t think she completely minded because normally we celebrate The Mommy’s birthday at my house and I do all of the cooking.  Now that Emmy has a house of her own and is getting married in LESS THAN A WEEK it was her turn to show off her culinary skills that she has mastered for her husband-elect.

Emmy did a fantastic job hostessing for the very first time!  Not only is it so exciting to have been there and shared in the joyous occasion, it is equally wonderful to share it with all of you!  Our (mainly Emmy’s) meal served 8 people and was incredibly inexpensive.  This feat in itself is something that should make Emmy proud.

And just because it’s fun: I bought The Mommy a pot of herbs from Trader Joe’s and we used it as a centerpiece.  It smelled fabulous as we ate!

So please take notes!  This is how you can prepare a charming and flavorful dinner for 8 people without having to break the bank but all the while being super proud.

Now onto the food!

Pea Pesto


Emmy made this fabulous Pea Pesto served with crostini and crackers.  (I’d like to note how simple it is!   A few ingredients can take you a long way!)

Serves 4-6

Ingredients:

1 (10-ounce) package frozen peas, defrosted
1 garlic clove
1/2 cup grated Parmesan
1 teaspoon kosher salt, plus extra for seasoning
1/4 teaspoon freshly ground black pepper, plus extra for seasoning
1/3 cup olive oil

Directions:

Pulse together the peas, garlic, Parmesan, 1 teaspoon of salt and 1/4 teaspoon of pepper in a food processor. With the machine running, slowly add the olive oil until well combined, about 1 to 2 minutes. Season with additional salt and pepper, if needed. Transfer to a small bowl and set aside.

Mediterranean-Style Stuffed Chicken

Serves: 8

Ingredients:

8 boneless, skinless breasts of chicken
3 cloves minced garlic
1-1 1/2 packages thawed, drained frozen spinach
1/2 cup white wine
4-6 ounces. Feta cheese, cut into 4 pieces
3 tablespoons Olive oil
3 Roma tomatoes, chopped
1/2-3/4 cup finely chopped onion
2 teaspoon dried basil

Directions:

Cut a two inch pocket into the thickest part of each chicken breast. Stuff each pocket with spinach and feta cheese and seal with a tooth pick. Season each breast well with salt and pepper. Heat oil over medium high heat and saute the breasts until golden brown on all sides. Remove chicken to a plate and cover with tin foil.

Add onion to remaining oil in pan and cook for 2 minutes. Stir in garlic and cook for 30 seconds. Stir in white wine and bring to a simmer. Stir in tomatoes and basil. Bring to a simmer and return chicken to the pan and cover. Simmer for 10 minutes. Remove lid and season sauce to taste. Serve with butter noodles tossed with parsley.

Smashed Red Potatoes


I’ll have to double-check with Emmy about how she prepared this one!  I know it involved milk and red potatoes with the skin on it.  I mentioned preparing this first and then putting it in a crock pot while we prepared the rest of dinner.

If you are able to prepare anything and put it in the crock pot or in a warmer drawer of your oven, I highly suggest it!  It alleviates so much stress of having to make sure everything is served hot.

Steamed Broccoli

Ingredients:

3/4 c. water
lemon slices (optional)
minced garlic (optional)
2 small or 1 large bag frozen broccoli
salt and pepper to taste
olive oil (optional)

Directions:

This is how The Mommy makes her broccoli: Place water in a small pasta pot or large skillet.  Add lemon slices, garlic, and broccoli.  Place on medium heat and cover.  Turn broccoli every minute or so to make sure that all broccoli is getting adequate steam.  When broccoli is ALMOST done, turn off the heat, and drain.  The broccoli will keep steaming when you transfer it to your serving dish and cover it.  (If you wait until your broccoli is fully cooked there is a good chance that it will keep cooking and turn yellow and mushy.)

Season with salt and pepper, drizzle with olive oil, and gently toss when ready to serve.

This is how Emmy makes her broccoli: Place the water and broccoli in a microwave-safe casserole dish (she omitted lemon slices), cover it and heat in the microwave for 4-5 minutes.  Toss it if some broccoli remains frozen and heat for an additional 30 seconds to minute.  Season with salt and pepper and serve.

The Mommy’s favorite Salad – Purple and Blue Crunchy Salad

Unfortunately I had already tossed the lettuce before taking the picture so you can’t see all the purples and blues that are hiding underneath!

We call this “crunchy” salad because The Mommy LOVES when her salads are very crunchy.  The radicchio and walnuts add the crunch that she considers to be a stress reliever :)

Ingredients:

dressing of your choice – mom likes balsamic or citrus vinaigrette*
2 heads romaine lettuce, washed and torn into bite-sized pieces
half a head radicchio, chopped
1/2 cup red onion, chopped
1 cup blueberries
1/2 cup walnuts
2 oz. feta cheese, cubed
salt and pepper to taste (we like LOTS of freshly cracked pepper)

Directions:

Place 1 Tbs. of dressing at the bottom of a large serving bowl, add remaining ingredients and gently toss.  Garnish with extra blueberries, walnuts, and feta.

Southern-Style Strawberry Cake

Ingredients for Cake:

1 (18.5 ounce) box white cake mix (without pudding)
1 (3 ounce) package strawberry jello
1 Tablespoon self rising flour
4 teaspoons granulated sugar
3/4 cup vegetable oil
4 eggs
1/2 cup water
1/3 cup fresh strawberries, finely diced.

Directions for baking cake:

Preheat the oven to 350 degrees F.

To make the cake, combine to cake mix, Jello, flour and sugar in a large bowl.  Mix well.  Add the oil.  Add the eggs one at a time, beating well after each addition  Add the water and strawberries and mix well.  Divide the batter evenly into three 8-inch round baking pans that have been oiled and floured.  Bake for 25-35 minutes, or until a tooth pick inserted into the center of the cakes comes out clean and the layers pull away from the sides of the pan.

Transfer the layers from the oven to wire racks.  Let them cool, still in their pans, for 10 minutes.  After 10 minutes, run a knife around the inside edge of each pan, then unmold each layer onto the racks to cool completely.

Ingredients for icing:

1 (8 ounce) block cream cheese, softened
2 sticks (8 ounces) unsalted butter, softened
1 box (1 lb.)  powdered sugar
pinch of salt
1 teaspoon vanilla extract
1 cup sweetened shredded coconut
pink food coloring
4 sliced strawberries

Directions for icing:

To make the frosting, in a bowl combine the cream cheese and butter.  Beat until soft and pliable and no lumps remain.  Add half of one box of the powdered sugar, salt and vanilla extract.  Beat until incorporated.  Taste test it.  If it isn’t sweet enough, add the second half of the box and mix until incorporated.  If you would like a smoother consistency, and a slash of milk.  If you would like a thicker consistency, and a bit more powdered sugar until the desired consistency is achieved.

Put the coconut in a small bowl and sprinkle with two or three drops of pink die.  Mix with hands to distribute the color and wash hands immediately.  Once the cake is frosted, decorate the top of the cake with the shredded coconut and sliced strawberries.

The party didn’t stop there!  The Mommy loves the fact that Emmy lives in a prime location for walking to different parks, restaurants, and shops so we stopped at a local Mexican restaurant for drinks.

And if you haven’t noticed, I’m in absolutely NO pictures because (clearly) I’m the photographer.  Emmy took some photos as well and will be posting about this fabulous day so maybe she has some of me in my flour-covered Phillies t-shirt.

Holiday Leftovers: Warm Wild Mushroom Salad

Warmed Mushroom Salad

For Christmas my parents got me this awesome cookbook – Simply Salads by Jennifer Chandler.  Now my Ma knows that I LOVE when my cookbooks have pictures to go with each recipe.  Lucky for me, these cookbooks tend to be less expensive than the ones without pictures.  Not sure why, but it works for me!

Perusing this book, I had no idea that it would be an inspiration for using up MORE of my leftover ham.  The recipe calls for pancetta, which is a dry cured meat that reminds me of bacon.  Instead of buying pancetta, I just used my Christmas ham.  Ham doesn’t create the same drippings in the skillet as bacon when you cook it, but a little olive oil solves that problem.  You still get the flavor, you just need a little assistance from the oil.

We had this salad right after church.  It hit the spot!  We wanted something light, but we wanted something that felt like a meal.  We served this salad with my homemade Ham and Cheddar Biscuits.  Home run, I tell you!  Never thought to warm wild mushrooms and place them on a salad.  Good call, Jennifer!

Warm Wild Mushroom Salad

Serves 4 for a meal or 6 for an appetizer

Source: Simply Salads by Jennifer Chandler, pg. 128 (& pg. 106 for salad dressing)

Ingredients:

Salad:

1/4 cup Sherry Vinaigrette – *recipe follows
1/4 pound pancetta, bacon, or ham ** if using ham, add 1-2 Tbs. olive oil
1 shallot, minced
1/2 lb. assorted wild mushrooms (I used oyster, porcini, and shiitake), ends trimmed
1/2 cup pine nuts, toasted
Kosher salt and pepper to taste
1 bag (8oz) Field Greens

Sherry Vinaigrette:

(I doubled this recipe for my salads)

1 shallot, minced
1 tsp. dijon mustard
2 Tbs. sherry wine vinegar (or red wine vinegar)
6 Tbs. olive oil
Salt and pepper to taste

Directions:

Prepare the Sherry Vinaigrette - In a small bowl whisk together shallot, mustard, and vinegar.  Slowly add the olive oil in a stream, whisking to emulsify.  Season with salt and pepper.  (Makes about 1/4 cup)

In a medium skillet, over medium-low heat, cook the ham (with olive oil) or pancetta/bacon without oil.  Cook until outside is crisp, about 4 minutes.  Transfer ham to paper-towel lined plate to drain, reserving the drippings in the pan.

Increase the heat to medium.  Add the shallot and cook, stirring often, until tender, 3-5 minutes.  Add the mushrooms and cook, stirring often, until lightly browned, about 5 minutes. Transfer the mixture to a medium bowl.

Add the ham and pine nuts to the mushroom mixture and toss.  Season with salt and pepper to taste.

In a large salad bowl, toss the Field Greens with the vinaigrette to taste.  Divide the salad among individual plates. Top with mushrooms.  Serve immediately!  (Otherwise the greens will get droopy!)

My pictures are a little fuzzy and dark because I was making sure to keep an eye on the food.  Post-picture taking, I realized that my lens was covered with steam.  So I apologize for the lack of crisp pictures.  (I am a bit of a perfectionist…)

I am so thrilled to report that dinner was a hit, and I didn’t serve cold macaroni and cheese!  My biggest fear was the timing of all of the food because I didn’t want to serve my loved ones cold ham and crusty macaroni and cheese.  With help from Ma and Papa Zigs, dinner went without a hitch!  Thank you, Ma and Paps!!

Prior to the main meal, I made some “snicky snacks” or as my Polish Poppy used to refer to them as “hordy doors”.  Ja cie kocham, Poppy!!  Miss you.

Steak with Pineapple Salsa

I went to the grocery store today so sweaty (I work outside at a camp), so tired (I work outside at a camp), and so not in the mood to do much when I got home.  Did I mention that I work outside at a camp?

I could barely put one leg in front of the other let alone think about dinner.  In my zombie-like trance (which is my fault since I am turning into an insomniac), I managed to muster up the energy to walk alllll the way to the back of the store to the recipe kiosk thingy.  I clicked on “healthy on a budget” and “steak”, and here you go.   Something I should have thought of before!   I cannot begin to tell you how simple it was to throw together and cook.  Just an FYI – I served the salad on the side rather than under the steak.

It’s funny because after the long walk to the back of the store, I realized that there was a recipe kiosk thingy right as I walked in.   How did I miss that one?

Steak with Pineapple Salsa

Serves: 4

Ingredients:

2 cups peeled, cored and chopped fresh pineapple
1 cup fresh orange slices, chopped OR 1 can mandarin orange sections, drained
1/2 cup red or green pepper, chopped
1/3 cup green picante sauce or green taco sauce (in the Ethnic or Goya section)
12 oz boneless sirloin steak
1/2 tsp. mexican seasoning or chili powder
1 Tbs. olive oil
6 cups torn mixed salad greens

Directions:

For the salsa, in a medium bowl gently stir together pineapple, oranges, bell pepper, and picante sauce.  Refrigerate until ready to serve.

Trim fat from steak and slice it thinly across the grain.

Sprinkle steak pieces with seasoning, toss evenly to coat.

In a large skillet, cook and stir half of the seasoned steak in hot oil over medium-high heat for 2-3 minutes or to desired “doneness”.   Remove from skillet.

Repeat with the remaining steak.

Arrange salad greens on plate, top with steak and pineapple salsa.

Cobb Salad Platter

Today we had a heat index of 105 degrees F.  And I was outside pretty much allll day looooong.  Needless to say, I wasn’t about to have anything hot for dinner.  I needed something cool and refreshing.  It was a night for salad.  I did it a little differently.  Instead of throwing it all in a bowl, I decided to make a platter out of it and put the lettuce on the side.  So go ahead.  Make a salad platter.  It makes the simplest of meals look beautiful and fancy.

My platter from Left to Right:

Red bell peppers
Green hot peppers
Avocado
Bacon
Chicken
Eggs
Scallions
Mushrooms
Roma tomatoes

I used endive lettuce and ranch dressing.  I know I should have used blue cheese, but I just love ranch!

Fresh Herb Salad

Herbed Salad

I tend to go to restaurants, order a beautiful salad, and try to replicate it at home.  Typically, I fail.  For me, I feel as if everyone BUT me makes delicious salads.  For instance, my mom always makes these gorgeous rustic salads with dried blueberries, fresh asparagus, and more!   She sprinkles it with Parmesan cheese and a homemade lemon vinaigrette.  Yum!  My other mother (Jay’s momma) puts out a fantastic display of freshly cut vegetables like avocado, cherry tomatoes, and broccoli sprouts and makes a salad bar.

How can I possibly compare??

Wellllll…. I’ve been practicing.  Yeah, I know… it sounds really silly to practice making salads, but when I mean “practice” I really mean testing out different combinations of lettuces, bean sprouts, dried fruits, fresh fruits and vegetables, and fresh herbs.

Let me tell you something.  Adding TONS of fresh herbs to your salads is the most incredible thing you can ever do.  I’m serious.  It’s THAT good.  For those of you out there that have already done this, you know what I’m talking about.  It adds a depth and a freshness to your salad that cannot be matched.

So this is one of my no-brainer recipes.  But it’s too good to not share with those that haven’t tried it before.

Fresh Herb Salad

Serves: 6-8 as a side dish

Ingredients:

16 oz. organic spring mix
3 oz. shitake, crimini, and oyster mushrooms (I got a package of them at Trader Joes, but any mushroom works)
a bunch of cherry or baby heirloom tomatoes, sliced
handful of chopped scallions
handful of fresh dill, chopped (reserve some for garnish)
handful of fresh basil, chopped (reserve some for garnish)
salt and pepper to taste
favorite salad dressing (I used a red wine vinaigrette)

Directions:

Toss all ingredients (except for some of the chopped herbs) into a large salad bowl.  Top with leftover herbs.

Oh, and look at my homegrown cherry tomatoes (well, tomato)!  I planted yellow cherry tomatoes, but I guess they decided to be orange.  They are so fresh and sweet.  It’s like eating a piece of candy.

Watermelon and Feta Salad with Mint

Watermelon Salad

This salad is so incredibly refreshing on a hot summer day.  You may be put off by the ingredients initially, but trust me, it is sooo good.  It’s savory and it’s sweet all in one.  I’ve had this thing lately for mint.  I just crave it.  Through this craving of mine I’ve discovered how amazing mint is with vegetables.  Try my Marinated Zucchini with Mint.  It’s awesome.  You’ll have to scroll down to the bottom of the page because this posting has a slue of recipes on it.   But while you’re on there, check out my herbed rubbed pitas.  Again, I use mint.  I’m telling ya, mint is incredible!

Watermelon and Feta Salad with Mint

Serves 4-6

Ingredients:

1 pound Campari or plum tomatoes, diced, drained
1 1/2 cups diced seeded watermelon
1 large green bell pepper, seeded, cut into 1/3-inch cubes
1/2 large English hothouse cucumber, seeded, cut into 1/3-inch cubes
1/2 cup very thinly sliced radishes
3 tablespoons olive oil, divided
10 ounces feta cheese, cut into small cubes (about 2 1/2 cups),
2 divided green onions, chopped, divided
1/4 cup thinly sliced fresh mint leaves, divided
1/2 cup plain Greek-style yogurt
1 teaspoon dried oregano

Directions:

Toss first five ingredients and two tablespoons oil in large bowl. Add half each of cheese, green onions, and mint. Mix remaining cheese, green onions, mint, and oil in processor; add yogurt and oregano. Process just to blend (do not over-mix or dressing will get thin). Season dressing with salt and pepper; mix into salad.

Hot & Sour Noodle Salad

To all of my quirky friends out there, this dish was made with Soba Noodles.  My beautiful puppy, Noodles, was not boiled, tossed in oil, and served in a bowl.  She is alive and well, still loving her fluffy pillows and eating carrots and peanut butter.

Moving on to the soba noodles…  I’ve been really trying to find easy recipes using only the ingredients in my cabinets.  Often, these meals are what I would post on here because they are simple, no brainers, but this recipe is totally post-worthy.  From the time that I put the water in the pasta pot to the time I mixed the sauce in finished noodles, this meal took all of 10 minutes.  Fan-flipping-tastic!

And, I discovered that soba noodles are now my all-time favorite pasta.  I could eat them when they are crunchy and raw – yeah, I know, I’m weird.  The closest thing that I can compare it to is an angel hair pasta as far as consistency goes.  Regardless (or should I say, irregardless?  JUST kidding.  That word drives me nuts!), this meal is a winner.  It’s fast, it’s light, and it’s inexpensive to make.  Oh, and Jay gave me the HUGEST hive-five after his first bite!

Hot and Sour Noodle Salad (without my puppy)

Source: The Vegetarian Cookbook, p. 155

Serves 4

Ingredients:

12 oz. thin pasta (I recommend rice vermicelli or SOBA NOODLES!)
4 Tbs. sesame oil (canola or vegetable works well if you don’t have the sesame)
3 Tbs. soy sauce
juice of 2 limes
1 tsp. sugar
4 scallions, finely sliced (use any onion if you don’t have these on hand)
1-2 tsp. hot chili sauce (any hot sauce is perfect)
2 Tbs. chopped fresh cilantro

Directions:

Prepare the noodles according to the package instructions.  Drain, put in a bowl and toss with half the oil.

Mix the remaining oil, soy sauce, lime juice, sugar, scallions, and chili/hot sauce together in a bowl.  Stir into the noodles.

Toss in the cilantro and serve.

Layered Tex-Mex Salad with Creamy Cilantro Lime Dressing

Please pardon the horrible picture with the enormous shadow.  It was pretty late at night, and the lighting was non-existent.

Omigosh, this salad was SOOOO good.  My favorite part is the Creamy Cilantro Dressing.  I used fresh limes, and it is absolutely divine.  I’m typically a ranch girl, but this dressing has swayed me away from ranch.

This salad is really fun because I used a glass trifle dish to expose all the colorful layers of the salad.  It’s perfect for a small gathering of friends and family.  This baby makes you look like you know what you’re doing, and it’s so simple.

Aside from the fact that it is quite tasty and presentable, there are a few changes that I will definitely be making.   There was simply not enough lettuce.  I felt like I was eating a cheese salad.  Now don’t get me wrong, I love cheese, but I need some other flavors and textures incorporated in there.  Next time I’m going to add an additional layer of lettuce after the first layer of cheese.

Secondly, inasmuch as the cornbread croutons look amazing nestled on top of the salad, there were simply too many of them!   My plate was full of cornbread and I had to put them back in the trifle dish.  It’s a shame because that’s what really makes the salad look beautiful.  I say either bake half of the amount of cornbread mix the recipe calls for or just bake all of the mix, put half on the salad, and serve slices on the side as well.

With minor alterations, this salad is extraordinary!  It’s fresh, vibrant, and oh so yummy.

Layered Tex-Mex Salad with Creamy Cilantro Lime Dressing

Serves 4-6

Ingredients:

Butter, for preparing 8 by 8-inch glass pan
1 (8.5-ounce) box cornbread mix (recommended: Jiffy)
1 large egg
1/3 cup milk
1 (15.5-ounce) can black beans, drained and rinsed
1 packet sazon seasoning (It’s made by Goya, but 1-2 tsp. ground coriander and 1-2 tsp. cumin work well if you don’t have sazon.)
Salt and freshly ground black pepper
1 cup salsa
2 tomatoes, seeded and chopped
1 large head romaine lettuce, cut into strips
Creamy Lime Dressing, recipe follows*
1 1/2 cups grated Monterey jack Cheese
1 1/2 cups grated Cheddar Cheese

Directions:

Preheat oven to 400 degrees F.

Grease an 8 by 8-inch glass pan with butter.

Stir together the cornbread mix with the egg and milk. Evenly spread into prepared pan and bake on the middle rack for 20 minutes. Remove from oven and cool in pan for 10 minutes. Remove from pan to cool completely.

Mix together the beans with the sazon (or cumin and coriander) and season with salt and pepper.

Toss the salsa with the tomatoes.

When ready to serve, cut the cornbread into 1/2-inch croutons.

Toss the lettuce with 3/4 cups of the dressing and split into two piles.

In a clear trifle dish, layer the Tex-Mex Salad beginning with the black beans followed by the Monterey jack cheese, one pile of lettuce, the tomato salsa mixture, the Cheddar, the remainder of the lettuce and top with the cornbread croutons. Serve the remaining dressing on the side.

Creamy Lime Dressing*

Yields 1 1/2 cups

2 tablespoons freshly chopped cilantro leaves
1 tablespoon red wine vinegar
1 teaspoon lime zest
1/4 cup lime juice (I recommend FRESH!!)
1/2 cup sour cream
1 clove garlic, smashed
1 tablespoon honey
1/2 cup extra-virgin olive oil
Salt and freshly ground black pepper

Directions:

Blend all the ingredients except the olive oil until smooth. While machine is running, slowly drizzle in the oil until incorporated. Season, to taste, with salt and pepper.

Kale Salad with Lemon Walnut Dressing

Kale Salad

I apologize for the absence.  I was in Florida with one of my best friends and partners in crime for the week.  One of the reasons that I love Nikki so much is that we share a love for really healthy food.  We’ll gab and gab about all the health benefits that certain things have or don’t have.  Naturally after being with Nikki for a week, I’m in a healthy mood so I whipped up a salad using Kale.  I was looking for Chicory but wasn’t able to find any, so this is what I got.  I have never had kale before – I didn’t even know if it would work for a salad, but I was pleasantly surprised.  It’s tougher than other greens, but kale is so packed with nutrients that it’s hard to imagine not including it in your diet because it’s one of those power house foods that have a deep impact on fighting cancer.

Kale Salad with Lemon Walnut Dressing

Ingredients:

Bunch of kale, thoroughly rinsed, stems removed and discarded, chopped
1 c. red, orange, and/or yellow peppers, chopped
1/4 c. Gorgonzola cheese
1/4 c. dried cranberries
1 1/2 Tbs. walnut oil
Juice from half of a lemon
1 tsp. honey
sea salt and freshly cracked pepper to taste

Directions

Place kale in bowl, top with the rest of the ingredients.
