Everything but the Kitchen Sink Pizza

I’ll be honest with you. I had absolutely no intention of posting this recipe. After sitting on my hiney ALL day working on my midterms for grad school, I decided that dinner was going to be completely mindless. I did not want to measure. I did not want to plan. I just wanted dinner.
My irresistibly adorable husband, Jay, turned to me and said, “How about pizza tonight?” PERFECT! I’m great at cutting up random veggies that I have on hand, sprinkling them on a pre-made pizza crust, and throwing it in the oven. Done and done. No thinking. Just eating.

This is why I wasn’t going to post this. Who needs to know how to throw toppings on a pizza? Well, I have to admit that this pizza was quite delicious and worth sharing with you. It’s simple, fresh, and healthy. The hearty wheat crust and veggies make this a very satisfying pizza. I suggest you try it.
Everything but the Kitchen Sink Pizza
(serves 6)
Ingredients:
1 pre-made whole wheat pizza crust
1 Tbs. + 1 tsp. olive oil
3 garlic cloves, minced
1/4 c. onion, roughly chopped
1 1/2 c. of your favorite spaghetti sauce (add more or decrease amount depending on size of crust)
1 c. shredded extra sharp cheddar cheese
1/2 c. crumbled gorgonzola cheese
1/4 c. kalamata olives
4 oz. mushrooms, sliced (canned mushrooms work great!)
2 Tbs. chopped scallions
1/4 tsp. basil (or several leaves of fresh basil)
salt and pepper to taste
red pepper flakes (optional)
Directions:
Preheat oven to 450 degrees F.
Lightly brush edges of pizza crust with 1 tsp. oil.
In a small skillet, pour in the remaining oil and place on medium heat. Add garlic and onions. Cook until fragrant and translucent – about 5 minutes.
Pour sauce in the center of the pizza crust spreading it into a thin layer covering all but the oil brushed edges of the pizza.
Add the garlic and onion on top of the sauce.
Evenly sprinkle the cheeses, olives, mushrooms, and scallions on top of the pizza.
Top with basil, salt, pepper, and red pepper flakes.
Decrease oven temperature to 425 degrees F and place pizza in oven.
Bake for 10-15 minutes until cheese has melted and the edges of the crust begin to brown.
